Inside Chef Benito Molina's Kitchen
Oh Ensenada, every time we visit you, I am left day dreaming and craving the impeccably fresh seafood that you have to offer. A couple of weeks back, Antonio was sent on assignment to capture chef Benito Molina in action, doing what he loves, and lives for in his kitchen at Ensenada's Manzanilla. We brought the little ones in tow, scouring the streets, and consuming tostadas piled high with fresh clams, scallops, and drenched in lime juice. We also couldn't resist quintessential fish tacos, and grabbing a locally brewed craft beer. Chefs of the region, and locals alike will tell you how lucky they are to have the waters of the Pacific Ocean at their fingertips, a flourishing wine valley just 15 minutes away, gorgeous local produce, and an emerging craft beer seen that's being recognized all over the world. This beautiful port city tugs at my heart strings just a little bit more, with each and every visit.

As night began to fall we headed to Manzanilla for another unforgettable meal, and Antonio was able to grab some gorgeous shots of the restaurant, and man him self, Chef Benito Molina. Manzanilla recently celebrated its 15th year being open. Both Molina, and his wife Solange Muris were some of the first to embrace the region's local ingredients, and help give Baja cuisine an identity.
The ambience in Manzanilla's dining room is warm and welcoming. Then add in hours of intriguing conversation, great wines, and outstanding dishes. Who would ever want to leave? The scenes in this post are an inspiration in itself. It captures the interiors of the kitchen, where you see the chef working his magic in a more serious tone, but then there are also the shots where friends and chefs come together and share a beer, and laughs. I will never get enough of watching the local talents in this region, and the incredible passion that is behind each and every one of them. Viva Baja!
