Toba: Mediterranean inspired cuisine paired with dreamy Valle de Guadalupe views
Perched in the hillside of Valle de Guadalupe’s Encuentro Guadalupe, Toba restaurant is one of the recent additions to the restaurant gems of the region— the view in itself is spectacular. As soon as you approach the entrance to the restaurant, music greets your ears, and your eyes travel to the scenery overlooking the property’s infinity pool, and beyond. We were whisked away into an experience that was truly unforgettable.
The earthy tones of the restaurant’s furniture and fixtures tie in seamlessly with the surrounding land. A view into the kitchen led by chef Andres Trujillo through the black framed glass windows, adds a special touch to the dining experience. This was most definitely one of the meals, that we continue to talk about to this day.
Both raw and tempura battered oysters graced our table. The contrast between slurps of the fresh briny oysters, and bites of the lightly battered warm oysters was incredible.
The afternoon’s seafood centric culinary journey continued with our main dishes of sea bass and seared tuna. Both were outstanding.
The meal came to a close with homemade madeleines prepared by Pastry chef Vanessa Franco. I don’t know if I have enough words to describe the joy that this dessert brought to us. Pops of orange in each bite of the spongy madeleine, which when combined with the chocolate sauce— there are no words. Let’s just say, if they are on the menu, you need them in your life.
Toba is genuinely a must when visiting Mexico’s wine country. All of your senses will thank you.
